Happy Thanksgiving to all my late night bloggers!
Thanksgiving is one of my favorite times of the year. It not only filled with a day of stuffing our selves with delicious treats, but a day to step back and remind us what we have in our lives and what to be thankful for!
So here it is....I am thankful for my loved ones who surround me everyday, and never let me give up on my hopes and dreams. I am thankful for waking up healthy everyday in a nice warm bed and home. What are you thankful for?
Before I leave, I wanted to share with all of you my favorite treat I make every year....Drum roll please!
SWEET POTATO CASSEROLE!
I'd love to share it with you, to make a tradition in your own home!
Ingredients:
One can or 4 large sweet potatoes
1/3 honey
1 large egg
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ginger
a pinch of salt
1 tbsp dark brown sugar
1/3 cup chopped pecans
Preheat oven to 350 degrees
If using fresh sweet potatoes peel and mash up, If using canned just mix them in with everything else!
Mix everything together until smooth. Then put an extra topping of pecans or walnuts on top.
Bake in oven for 40 to 45 mins.
Then when done place mini marshmallows on top for a sweet touch then wait till they are golden on top.
Serve, pass on, and enjoy!
